We're Twisted, I know (Vol. 3)

Lime twisted. We can't help it! We love limes. And we love the faces our babies make when they try limes for the first time.

A couple of nights ago we were making some of these delicious Honey Lime Chicken Enchiladas (the recipe is our own modified version of one we got from our friend Amanda's blog):

1/2 cup honey (be generous)
1/2 cup lime juice (also be generous)
1 tsp chili powder (to taste depending on how much kick you want)
1/2 t. cumin
1 clove garlic, crushed
3 (or so) TBS of diced green chilies
1 lb. chicken, cooked and shredded (2-3 large breasts)
1 can black beans, drained and rinsed.
1 cup of cooked rice (original recipe said a can of corn, but we like rice instead)
1 lb monterey jack (or pepper jack) cheese, shredded
16 oz. can green enchilada sauce
6 large flour tortillas
1 fresh lime sliced into six wedges (for garnish)
Fresh chopped cilantro for garnish

Mix together honey, lime juice, chili powder, garlic, cumin, and green chilies together and toss with chicken. 
Let it marinade for a several minutes before adding rice (or corn) and beans. Mix well. 
Fill tortillas with chicken mixture and cheese, roll tightly and put in pan. 
Pour enchilada sauce over tortillas and sprinkle with cheese.  
Bake at 350 for 30 minutes until brown/crispy on top.
Top with chopped cilantro and a slice of lime 

If you want to get really fancy, top it also with shredded lettuce and diced tomatoes or pico de gallo Cafe Rio style (we have tried this, and it is excellent).  I liked the cilantro garnish so much, I'm tempted to chop some and put it inside the enchiladas next time.

Anyway... that recipe has nothing to do with the purpose of this post.  But if you try this recipe, you'll thank me for including it.

Do yourselves a favor and cook those enchiladas. And while you're at it, make sure to leave some lime wedges within reach of your curious grabby baby. And have the camera ready!

Those enchiladas sound delicious! I let our five month old have a lime when she was being particularly grabby and she didn't even bat an eye when she got it in her mouth. I was so disappointed.
